It's a rare day when I don't fulfill the food requests that my wife makes. I might not be the best at cleaning up after myself or putting my stuff away, but when food is involved, well, I comply.
If there's one thing I've learned over the years with quick breads and muffins it's that you should never over stir the wet and dry ingredients. Just the right amount of gets the perfect crumb. Also, use a lot of butter to coat up the muffin tin, both inside the tin and on top. It's the little details that matter most.
