Last Friday my parents came into Chicago to join us for dinner. The plan was to cook at home. We decided to make rigatoni with spicy Calabrese-Style pork ragù. After a quick trip to the grocery store at 5:30 p.m., we started working on the mise en place. After a few minutes of cutting up an onion and celery we started to read the recipe. Kind of make sense to read the recipe first, right? Well, I didn't A few steps in I realized that this takes four hours. That would mean we'd be eating dinner at around 9:30 p.m. We went out for pizza instead.
However, that didn't stop me from making the pork ragù on Saturday afternoon and then having it for dinner last night. The recipe is super easy, just takes time since it needs to cook slow. You can find the recipe on Bon Appetit.
Another lesson learned? Pork ragù is too rich to eat two nights in a row. If you care about your heart and your health don't even try to eat this on two consecutive nights. The plan was to eat it on Monday and Tuesday. Not going to happen tonight.
