Then I made some more bread, a 50 percent whole wheat with BIGA. Flour, Water, Salt and Yeast: The Fundamentals of Artisan Bread and Pizza by Ken Forkish is my go-to cookbook for baking bread.
Want to learn how to bake bread? Start with this book. I've baked every bread except the the sourdough. The pizza doughs are fantastic as well, especially the high hydration dough, which is my preferred dough for pizza. Just wish I could bake it in a crazy hot oven.
